Why Don’t All Pickles Taste Exactly the Same?

A little about what makes traditionally made pickles different.

If you’ve ever bought pickles from us more than once, you may have noticed that one batch can taste just a little different from another. Maybe one batch is a little more sour, another a little more garlicky, or the cucumbers are slightly different in size or texture.

That’s not necessarily a bad thing. It’s simply part of making pickles with real ingredients and a traditional process.

Pickles Start With the Cucumber

Unlike a mass-produced product where every ingredient is designed to be as consistent as possible, pickles start with a fresh agricultural product.

The variety and size of the cucumbers, the season they were grown in, and even the conditions during that growing season can affect the finished pickle.

And cucumbers aren’t the only ingredient that can make a difference. The quality and strength of the garlic, the brine, temperature, and the amount of time the pickles cure can all influence their final flavor and texture.

That means two batches made using the same traditional process can still have subtle differences.

Everyone Has Their Own “Perfect” Pickle

And then there is personal taste.

Some people want their cucumbers small and extra crisp. Others come looking for large, substantial pickles.

Some customers love a pickle that is extremely crunchy, while others prefer one that has had more time to absorb the brine and develop a deeper flavor.

Some want lots of garlic. Others prefer a more subtle garlic flavor.

And sourness is probably the biggest one of all. What tastes perfectly sour to one person may not be sour enough — or may be too sour — to someone else.

There really is no single definition of the perfect pickle.

Pickles Aren’t Quite Like a Chocolate Bar

When you buy a packaged chocolate bar, you generally expect it to taste exactly the same every time you buy it.

Pickles are a little different.

They are made from fresh produce, and the ingredients themselves naturally vary. The curing process also plays an important role in how the final pickle tastes and feels.

That’s one of the things we love about traditionally made pickles.

They’re not meant to be completely uniform. They’re meant to have character.

Made the Way We’ve Always Made Them

We’ve been making and selling our pickles for years — at farmers markets, in our store, and online.

We do our best to maintain the flavor and quality our customers know and love with every batch. But small differences from one batch to another are a natural part of working with fresh ingredients and a traditional curing process.
