Castelvetrano Olives with pits

The texture and feel of Castelvetrano olives are crispy and snappy. The inside flesh feels creamy and is medium-soft. They are ideal for snacking since they are quite light and have a taste that is nearly sweet. 

The Valle del Belice, a tiny area on the Italian island of Sicily, is the native home of Castelvetrano olives. Nocellara del Belice is another name for Castelvetrano olives.

Store the olives in the brine in a jar and refrigerate. The olives will last longer this way.
